A fresh, creamy Bircher muesli recipe made with oats, apple and yoghurt. Easy to prepare, genuinely filling, and ideal for a healthy make-ahead breakfast.
I started making my own Bircher muesli at home to save money, but it quickly became something I genuinely prefer to shop bought versions. When you make it yourself, you know exactly what’s going in with no unnecessary sugars, no fillers, just simple ingredients like oats, apple, yoghurt and milk. I usually make a batch at the start of the week and portion it out, which makes it much easier to stick to healthier breakfasts without spending more than I need to.
This version is the one I come back to most often. It’s easy to prepare the night before, keeps well in the fridge, and takes the pressure off busy mornings. The oats soften naturally as they soak, the apple keeps everything fresh, and the texture stays creamy rather than heavy. It’s the sort of breakfast that feels light but still keeps me going until lunchtime, which is exactly what I want from something I eat most days.
Ingredients
- 50g Rolled Oats
- 125ml Fresh Apple Juice
- 75g Greek Yoghurt
- 1 Eating Apple grated with skin left on
- 1/2 Lemon Juiced
- 1 Tbsp Honey or Maple Syrup
- 2 Tbsp Chopped Nuts
- 1 Tbsp Sunflower Seeds
- 2 Tbsp Ground Flax Seed (Optional)
- 1/4 Tsp Ground Cinnamon
- Extra Greek Yoghurt, Fruit and Homemade Granola as a topping (Optional)
Instructions
Place all dry ingredients in a bowl first and stir round.
Then add in the wet ingredients and stir through.
Place in individual lidded pots or leave in the bowl with cling film or a lid on top.
Allow to sit for at least 2 hours, preferably overnight.
I then like to add a little extra Greek yoghurt before eating, along with some of my homemade granola for crunch. You can also add some fruits
Notes
You can add a little Chia seeds to this recipe, but it is better that you soak overnight so as to avoid any stomach bloating effects, that some people can occasionally get.
