This Christmas biscuit recipe has no spice in it. If you wanted to, you could add half a teaspoon of mixed spice to the ingredients. I usually keep mine to plain vanilla, as the children that are round me most, tend to prefer them that way.
I have two different styles of Christmas biscuits that I like to make. I have the shortbread style one that I make, but this is the firmer type of biscuit, which makes it easier for decorating and using for tree decorations!

- 100g Butter softened
- 100g Caster Sugar
- 1 Large egg beaten
- 280g Plain flour
- 1Tsp Vanilla extract
- Decorations that you wish to use.
Instructions
Preheat the oven to 190 degrees centigrade. Also line a large baking tray with baking paper.
Beat the butter and caster sugar until light and fluffy, this might take a couple of minutes. Then gradually add in the vanilla extract along with the egg making sure you alternate between adding some egg and then adding some flour. Do this until each has been used up.
Roll out the dough onto a lightly floured surface and cut the shapes out, placing them on the baking tray. Make sure you do not put the shapes too close together. If you wish to use them as Christmas decorations then make sure you put a hole in using a skewer, or something similar. That way when they have cooked and hardened, you shall be able to thread some ribbon through.
Bake for around 8-10 minutes and then let them stay on the baking tray until they have firmed up. If you try to move them sooner, they could break apart. Then allow them to cool full on a wire rack until completely cold. If you decorate whilst slightly warm, you might get in a mess!
