Mini egg shortbread is fabulous for Easter baking. When you are looking for simple Easter baking ideas, then this is a truly tasty Easter recipe that you might not just reserve for Easter…. more on that in a minute!

Many Easter baking recipes can be particularly heavy with chocolate, which is no bad thing if you love chocolate. However, quite a few people have asked me for a mini egg recipe that is not heavy on additional chocolate. So here we have the combination of crisp buttery shortbread biscuit, with the option of chocolate chips/mini eggs. As you will see from the video, I used both, but that’s fine for me! It’s also 4 ingredients plus mini eggs or chocolate chips of choice, and is super quick to put together. It’s not a fancy recipe, but when the family know I have made this shortbread, they head straight for the tin!

Do I just reserve this recipe for Easter? No, absolutely not. Mini eggs are not available all year round, so I then just make with chocolate chips, which is just as delicious! There is something about chocolate and shortbread that is a winning combination, so I hope you enjoy this recipe as much as I do.


Ingredients

Scale
  • 340g Plain Flour
  • 230g Butter
  • 120g Caster Sugar
  • 1 tsp Vanilla extract
  • 100g Chocolate Chips or Mini Eggs


Instructions

Grease and line a baking tin ( I use a square 8″ x 8″) and preheat your oven to 170°C fan. Cream the butter and sugar for around 5 minutes.  Then mix in the flour and then chocolate chips.  Then mix until it is starting to come together as a cookie dough.  Turn out the dough into your tin and begin to level and push it out into the corners.  Like the video you can use your hands, or the back of a spoon or other utensil.

Bake for 35-40 minutes.

Remove from the oven and allow the shortbread to cool for a minute.  I then dot the mini eggs (if using at Easter) into the warm shortbread.  Then when it is still warm I cut into segments, but leave to cool and firm up before touching.  

These keep for around 3 days, but in my house last a day!
