Coconut & Almond Energy Balls

Description

Coconut and almond energy balls are a great way for me to get a burst of energy whilst out on one of my long trail runs. No bake and vegan they are a great energy ball recipe that is suitable for many! Using healthy ingredients like dates are great for those wanting to cut out processed forms of sugars.

The reason why I started to make my own energy balls was because I found the cost of energy bars in shops was becoming ridiculously expensive. With these coconut and almond energy balls, there is no cooking involved, so they are simple to make.

Ingredients

  • 130g Dates
  • 100g Ground Almonds
  • 1Tbsp Of Cocoa Powder
  • 1 Tsp of Vanilla Extract
  • 1 Tbsp Desiccated Coconut
  • Some boiled kettle water

Instructions

In a jug or bowl place the dates and add boiling water over to cover them.  Leave the dates to soften in the water for 15 minutes

After 15 minutes, remove 2-3 tbsp of the boiled date water and add to a food processor.  Drain the rest of the dates and then add them.

Then add in the ground almonds, cocoa powder and vanilla extract.

Whizz until blended.  Make sure no pockets of unmixed ingredients are in the food processor bowl.  Use a spatula to go round the edge and check.

Then in another bowl or plate, place the desiccated coconut.  Take about a golf ball sized lump of the date mixture.  Roll into a ball with your hands and then roll into the coconut.  

The mixture makes about 6.  Then place them in a container and then into the fridge.

Notes

These last for two weeks in a container in the fridge.
