Description

Feta tomato pasta recipe, which is a version of the feta pasta recipe tik tok made famous. This is my tweaked version, as some recipes looked less than desirable or appetising. This baked feta pasta recipe is also for two – four people depending on whether you want it for lunch or a main meal.

I have always loved feta cheese, along with a lot of Greek food! However, the quality of the ingredients is key here. Watery tomatoes and weak feta is not going to give you the same flavour explosion. Choose good quality feta and tomatoes in particular for this feta tomato pasta recipe, or you might be wondering what all the hype is about.

There are different versions of this dish, but this is how I make it. I prefer to bake the garlic and squish it out, to me the flavour gets in better than just adding it ten minutes after cooking. So whilst this tik tok feta pasta recipe is popular, it truly depends on the method, plus the other little hits of flavour ingredients that you give it, as well as quality of ingredients. That said, if you do all three of the previously mentioned, you should have a great winning dinner!

Ingredients

  • 400g Cherry Tomatoes
  • 200g Block of Feta Cheese
  • 1-2 Tbsp Olive Oil
  • 4 Large Garlic Cloves
  • Salt & Pepper
  • 1/4 tsp Chilli Flakes
  • 1 Tbsp Italian Seasoning
  • Handful of Fresh Basil leaves
  • 180g Pasta of your choice (this is approximate and depends on how many you are serving and whether this is for lunch or your main meal.)
  • 3 Tbsp Parmesan (Optional)

Instructions

Pre-heat oven to 180 degrees centigrade fan.

In a baking dish place the feta, then around the feta add the garlic cloves with the skin on, then pack the tomatoes round fairly tightly.  Drizzle olive oil over, and sprinkle the chilli flakes and Italian seasoning.  Finish off with a good grinding of pepper and a little salt.

Place in the oven for 30 Minutes.

About half way through cooking, start to cook your pasta to the packet instructions.  However it is important to note that when you drain your pasta you reserve some of the pasta water for the next stage.

When the feta bake is out of the oven, gently lift the garlic cloves, which should slip out of the skins.  Squish some of the tomatoes and break up the feta.  Then stir in the pasta with a ladle full of the pasta water, and stir.  Add the basil leaves on top.

Serve as it is, or with something like focaccia bread to mop up the delicious juices!
