Description

Ham and lentil soup recipe, that is a great red lentil soup that can use up ham leftovers.  If you are looking for an easy lentil soup recipe, then this could be a great hearty soup recipe.  It is also a healthy soup recipe too.  You could easily omit the ham if you wanted, use a vegan substitute and of course add things like pearl barley, kidneys beans or butter beans.  

Sometimes when you are thinking what’s for dinner, or what’s for tea that I can make quick and easy, then this soup will hit the spot and fill up hungry bellies in a healthy way!

Ingredients

Units Scale
  • 80g Red Lentils
  • 1 Celery stick chopped
  • 1 Carrot chopped
  • 1 Large onion chopped
  • 100g Swede chopped
  • Handful of chopped parsley
  • 1 litre of good vegetable stock
  • 150g Shredded ham hock

Instructions

In a large saucepan, add in the red lentils, celery, carrot, onion, swede, parsley and vegetable stock.  Bring to a boil and then simmer with a lid on for 25 minutes.

After 25 minutes remove the lid and add in the shredded ham hock.  Simmer for a further 5 minutes.

If the soup is too thick in consistency, add some extra hot water from your kettle.

Check for seasoning and serve.

Notes

You can make this vegetarian by omitting the ham and/or replacing it with a veggie ham substitute.

You can also add a little pearl barley or try kidney or butter beans.

This soup freezes well.
