Description

Tomato soup recipe which has always been a favourite soup in our house.  This is an easy, homemade and inexpensive tomato soup to make. It is also very popular. How do you know this… when you find someone with a spoon trying to scrape the last of it out of the big pan! This tomato soup recipe can be adapted for vegans too. Just substitute a couple of ingredients as suggested below and on the you tube video.  Remember to always try to buy premium canned tomatoes and vegetable stock where possible.

Tomato soup is great for when you are feeling under the weather or just not feeling as good as you should. I always try and make a batch and freeze it (minus the cream) incase I am feeling off it. You then just add the cream or alternative at the last stage of cooking. It then saves you having to do much when you don’t feel like it!

Ingredients

Scale

1 Can of tomatoes ( I use a real good quality brand)
Glug of olive oil
1 Onion finely chopped
1 Garlic clove crushed
Ground Black Pepper
1 tsp Sugar
400 mls of vegetable or chicken stock
200 mls of milk - vegans could use oat milk
Handful of fresh basil leaves
(Optional) Good dollop of mascarpone, creme fraiche or cream. Vegans could use an oat cream style alternative.


Instructions

In a medium saucepan add the olive oil, onion and garlic and sweat gently until the onions go translucent looking. Add the tomatoes, sugar, stock and pepper then cook gently with a lid on for ten minutes.

Then add the milk (or alternative) and basil leaves and continue to simmer for five minutes. After this, use a food processor or hand blender and whizz until you have the consistency you like. If too thick for you, just add a little hot water from your kettle to loosen it. You can also put it through a sieve to get an extra silky smooth soup.

You could eat this as it is, but mascarpone takes it to a whole new level. You could use creme fraiche, single cream or a vegan alternative.

Notes

You can add croutons as well but these are not included in the nutrition guide.
