Best cauliflower soup recipe ever, which livens up what is generally a vegetable that is milder in taste. This is also an easy cauliflower soup, that is so cost effective. The cauliflower used in the video was an organic cauliflower that was in the reduced section for a few pence. There was absolutely nothing wrong with it, in fact, its was nigh on perfect bar a couple of limp leaves. So this cream of cauliflower soup is a great way to use up a cauliflower, but to also feed yourself and you family well. This recipe is certainly one of the tastiest cauliflower recipes.
This recipe for cauliflower soup is full of taste. There are a couple of ingredients which I wouldn’t be without when making this cauliflower soup recipe. Bay leaf and celery elevate this dish to give it more flavour. If you don’t add these, the soup will not taste the same. Ingredients
- 550g Cauliflower (1 Medium) cut into florets
- 1 tbsp Olive oil
- 30g Butter
- 200g White Onion chopped
- 1 Celery stick chopped
- 2 Garlic cloves chopped
- 1 litre of chicken or vegetable stock
- 1 Bay leaf
- Pinch of chilli flakes
- 50ml Double cream
- Salt & Pepper to taste
- Optional - rocket, parsley, croutons, crispy bacon or pancetta.
Instructions
Melt the butter into the olive oil in a saucepan on a low to medium heat. Add in the onion, garlic and celery. Sweat the vegetables gently for about 5 minutes, taking care to not let the vegetables burn.
Then add the stock, bay leaf, chilli flakes and cauliflower. Place a lid on top and simmer for around 15-20 minutes until the cauliflower has turned soft.
Once cooked, first of all remove the bay leaf and then blend until smooth (see my top tip in the notes below). Then add any cream that you wish to add. Taste for seasoning and add any salt and pepper, but do this at the end as a good stock tends to have enough seasoning.
Optional extras for the top of the soup could be parsley, rocket, chives, croutons, crispy bacon or pancetta.
Notes
Top tip: If you want your cauliflower soup super silky smooth, then after blending place it through a sieve.
