Orange Olive Oil Cake

Orange Olive Oil cake, which is simply the most delicious lightly fragrant, moist orange cake ever! Whenever I am abroad in Europe, I always see these beautiful but simple citrus cakes, either orange or lemon cake, and they are just truly divine. They make an appearance at breakfast, which maybe seems odd to have cake for breakfast in Britain, but this is delicate and feels very European. However I love this orange cake any time of day. I hate using the word moist, but this orange olive oil cake is not dry and cloying, plus stays perfect and even more unctuous as the days go on, if placed in a tin.

This also makes a great Easter recipe. Many people I know, strangely do not enjoy the over the top amounts of chocolate that is in Easter baking. I must just be greedy because I like everything. But I understand the point, that people like something lighter and less heavy, and this orange cake recipe offers that. You can have it on its own, with cream, custard or ice cream. Have an orange sugar drizzle on top, or even orange icing. The possibilities with this recipe is endless!

Ingredients

Scale
  • 3 large eggs
  • 200g caster sugar
  • 240ml extra virgin olive oil
  • Zest of 2 oranges
  • 240ml freshly squeezed orange juice (about 2–3 oranges)
  • 1 Tsp Orange Extract (optional please read instructions)
  • 200g self-raising flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Icing sugar, for dusting (optional)
  • 1/2 Orange juiced (optional)
  • 2 Tsp Sugar (Optional)

Instructions

Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake tin with parchment paper.

In a large mixing bowl, beat together the eggs and caster sugar until pale and fluffy.

Gradually pour in the extra virgin olive oil while continuing to beat the mixture. Add in the orange zest and mix until well combined.

Slowly pour in the freshly squeezed orange juice, mixing until the ingredients are fully incorporated.  This is a light orange fragrant sponge.  If you want something with punch, then you can add 1 tsp of orange extract.

Sift in the self-raising flour, baking powder, and a pinch of salt into the wet mixture. Gently fold the dry ingredients into the wet mixture until just combined. Then gently whisk through for 10-15 seconds.  Be careful not to over mix.

Pour the batter into the prepared cake tin and smooth out the top with a spatula. Place the tin in the preheated oven and bake for 35.  Then take out of the oven and cover with foil.  Continue cooking for a further 20-25 minutes or until a skewer inserted into the centre comes out clean.

If you want an orange drizzle, mix 1/2 an orange juice with two teaspoons of ordinary sugar.  Then stab the cake all over with a toothpick or similar, then drizzle over this orange sugar, whilst the cake is still hot.

Then let it cool in the tin. Then, transfer it to a wire rack to cool completely. Dust with icing sugar before serving if desired.

Notes

Have as it is, or with an orange sugar drizzle, or even drip some orange icing.
