Description

There’s something wonderfully comforting about a cobbler with its juicy berries bubbling away beneath a golden, buttery topping. This blackberry cobbler is simple, homely, and perfect for showcasing late summer fruit. It just reminds me of autumn cooking with the hit of cinnamon, which is one of my favourite seasons of the year, especially as a cook. Serve it warm with custard, cream, or a scoop of vanilla ice cream.
Ingredients
For the fruit filling:-
- 500g fresh blackberries (or frozen, thawed and drained)
- 100g caster sugar (adjust depending on berry sweetness)
- 1–2 tbsp cornflour – see note below in the instructions
- ½ tsp ground cinnamon
- 1 tsp lemon juice
For the cobbler topping:-
- 175g plain flour
- 1 ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 75g golden caster sugar
- Pinch of salt
- 100g cold unsalted butter, diced
- 120ml buttermilk (or whole milk with 1 tsp lemon juice, left to stand for 10 minutes)
Instructions
Preheat the oven to 190°C (170°C fan). Place the blackberries in a baking dish (about 20cm square). Sprinkle over the sugar, flour, cinnamon, and lemon juice. Stir gently to coat, then spread into an even layer.
(Extra Tip) – I like the blackberry juice with my cobbler, but sometimes the berries are so full of juice it can make the filling watery. So my tip is to take all those filling ingredients, place them in a saucepan and gently cook for 15 minutes or so until some of the moisture is evaporated off. Alternatively use 2tbsp of cornflour instead of 1 tbsp.
In a mixing bowl, sift together the flour, baking powder, bicarbonate of soda, sugar, and salt. Rub in the cold butter with your fingertips until the mixture looks like coarse breadcrumbs.
Pour in the buttermilk and mix lightly with a fork until just combined – it should be a soft, sticky dough. Avoid over mixing, as that can make the topping heavy.
Drop spoonfuls of the dough over the blackberries, leaving little gaps for the juices to bubble through. Don’t worry about making it neat – the rustic look is part of the charm.
Place in the oven for 30–35 minutes (some ovens may take 40-45 minutes), until the topping is golden brown and the fruit is thick and bubbling around the edges. If cobbler topping is colouring too much, place some foil over the top and continue cooking.
Allow to cool for 10 minutes before serving, this helps the juice inside thicken slightly. Best enjoyed warm, with lashings of custard, cream, or ice cream.
Notes
If your blackberries are very tart, add an extra tablespoon of sugar to the filling.
For a nuttier finish, sprinkle flaked almonds or demerara sugar over the topping before baking.
Try mixing in a handful of chopped apple or pear with the blackberries for an autumnal twist.
