If you have ever wondered how to make leek and potato soup, and then want no cream, or no milk, or indeed with cream or milk, then this is the recipe for you. I always add any cream or milk at the end and there is a good reason for this. I find that this is the best homemade potato leek soup recipe, simply because you can have it with the additions or without. I first of all, make my leek and potato soup without the options of cream or milk. I find that it freezes better that way. Then simply you can defrost (or not if eating fresh) and then add the cream or milk if you desire, as the last stage.

Want a chunky leek and potato soup? Fine no problem, just follow all the steps and ignore the blending instructions at the end. This is what I do for my husband, who prefers his chunky, whereas I prefer mine blended.

Is this leek and potato soup recipe the same as Vichyssoise? Vichyssoise is also known as potage Parmentier, which is served cold. This leek and potato soup recipe, is very similar but served hot.

Can you make potato and leek soup in the slow cooker? You sure can. I follow the first part of the recipe sautéing the base ingredients, then when cooking I place in the slow cooker on low for a couple of hours and then blend (not blend) and then add cream (or no cream), which ever is your preference.

Ingredients

Units Scale
  • 40g Butter
  • 2 Tbsp Olive Oil
  • 150g Onion diced (1 Medium Sized)
  • 300g Leeks sliced ( 2 Medium sized)
  • 200g Potato peeled and diced
  • 500ml chicken stock (or you can use vegetable stock)
  • 500ml hot water
  • Pepper
  • Salt (to taste at the end)
  • Optional – single cream, milk or croutons see below.

Instructions

In a saucepan melt the butter with the olive oil and then add in the leeks, onion and potato.  Cook on a low to medium heat for five minutes, stirring so that the onions and leeks don’t catch and burn.

Then add in the stock, water and a good grinding of pepper.  Cook on a simmer for 15 minutes with a lid on.

Check the potato is cooked through and then once cooked, you have your base soup.  Now you can choose to add in a swirl of cream or milk ( I like to do this), and of course blend your soup should you wish.

If you are intending to freeze your soup, then I would leave the cream and milk out, as I find it just tastes better when defrosted and reheated.  You can then pop some cream and milk in as it is gently reheating.

Notes

I love to add either some croutons or fried onion rings on this once cooked.  Another nice addition and garnish is chopped chives.
