Ingredients
- 200g Caster Sugar
- 5 Tbsp Of Golden Syrup
- 2 Tsp Bicarbonate of Soda
Instructions
Line a 20cm square tin
In a heavy saucepan place in the sugar and the golden syrup, and place on a low heat. Also try not to stir, as I find by doing so, the honeycomb could crystallise.
Once the sugar and golden syrup has melted, use a thermometer and let it reach 150 degrees centigrade. If you don’t have a thermometer, watch the video and see how the sugar syrup reacts and watch for its change in colour.

Then once it has reached 150 degrees centigrade, remove the pan from the heat and add in the bicarbonate of safe and mix quickly. It will froth and foam, which is perfect. Don’t over mix, and then place into baking tin. Leave to cool for around one and a half hours. It has to be properly cool before you start breaking it up and storing it. Don’t place in a fridge or it goes soft, just placing in a cool dark place within a kilner jar with a good air tight lid is perfect. It may stick a bit in the jar, but just get a sharp knife and jag into it and it breaks up again.

This is great on top of desserts, and you can coat chocolate over the top of it too.
