Ingredients

Units Scale
  • 175g butter, softened
  • 175g caster sugar
  • 3 large eggs (room temperature)
  • 175g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2–3 medium-sized cooking apples, peeled, cored, and thinly sliced
  • 1 tsp Cinnamon (optional)
  • 75g plain flour
  • 50g cold unsalted butter, cubed
  • 50g demerara sugar (or light brown sugar

Instructions

Preheat your oven to 180°C (350°F) or Gas Mark 4. Grease and line a 20cm (8-inch) round cake tin with parchment paper.

In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. If the mixture starts to curdle, you can add a tablespoon of the self-raising flour to help stabilise it.

Add the self-raising flour and baking powder into the wet mixture and gently mix it in until you have a smooth cake batter. Add the vanilla extract and mix until combined.

Pour the cake batter into the prepared cake tin and smooth the top with a spatula.

Arrange the thinly sliced apples on top of the cake batter, covering it evenly. You can create a decorative pattern if you like. I like to dust over some cinnamon but this is optional.

To make the crumble topping, place the plain flour and cubed cold butter in a separate bowl. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs. Stir in the demerara sugar.

Sprinkle the crumble topping evenly over the sliced apples, covering them completely.

Bake in the preheated oven for approximately 45-50 minutes or until the cake is golden brown and a knife inserted into the centre comes out clean.

Once baked, remove the cake from the oven and let it cool in the tin for about 10 minutes. Then, transfer it to a wire rack to cool completely

You can dust it with a little icing sugar before serving, if desired. Enjoy your delicious homemade treat with a cup of tea, ice cream, cream or custard.

Notes

This tastes lovely cold too as a cake.
