Needless to say, they both eat almost everything put in front of them now, and are now strapping young men!
This carrots and coriander soup recipe is also quick to make. You can also make it a vegan carrot and coriander soup by using a cream alternative at the end. Also there is no need for a slimming world style carrot and coriander soup, as it is equally as nice without any cream added. Ingredients
- 1 Tbsp Vegetable Oil
- 1 Large Onion Chopped
- 30g Red Lentils
- 250g Carrots sliced
- 2 Tbsp Ground Coriander
- 1.5 Litres of Either Chicken Or Vegetable Stock
- 3 Tbsp Single Cream (optional)
Instructions
In a large saucepan, place in the oil and then add the onion. On a low to moderate stove heat, cook until the onions are beginning to get soft and translucent. Add in the lentils and cook for a minute or so. Then add in the carrots, ground coriander and the stock. Simmer with a lid on for around 25 minutes until the carrots are soft.
Then using a liquidiser or stick blender, blend until smooth. Then swirl and mix in the optional cream if using.
Notes
Croutons make a nice addition to this soup.
