Ingredients
- 90g Melted Butter
- 160g Light Soft Brown Sugar
- 90g Caster Sugar
- 2 Eggs
- 1 Tbsp Vanilla Extract
- 130g Plain Flour
- 100g White chocolate chips (Or milk chocolate chips of you prefer)
- Optional dusting of icing sugar
Instructions
Preheat your oven to 180 degrees centigrade fan, and line a square baking tin.
In a bowl place your melted butter, light soft brown sugar, caster sugar and mix round to combine. Then add in your vanilla extract and eggs and mix again for a few seconds. Then add in your flour and mix well. Finally add in your chocolate chips and stir and fold in.
Pour into the lined baking tin.
Cook for around 35 minutes. They should be slightly gooey still in the middle. That’s how we like them. However, like the narrative and description above, some of my family fight for the ones around the outside because they “like the chewy edge” (their description not mine). So to deal with this family issue, I slice the brownie into segments once it has cooled for a few moments. Then I take the inner few squares (usually around 4-5) and then pop them on the baking sheet and back into the oven for a further 5-10 minutes. I then place them on the wire rack to cool with the others and then once cooled I dust them with icing sugar. I also at the point guard my kitchen, because the family hover about trying to take them before they have cooled properly.

What is a blondie made of?
A blondie is made of similar ingredients to a brownie, but without the cocoa powder. You can put different ingredients in a blondie, but a preferred option is white chocolate or milk chocolate chips.
Are blondies supposed to be gooey?
As far as myself and my family goes, a blondie is supposed to have a gooey internal texture. Although if you go by my recipe for blondies, then you will see that they love a chewy outside and a gooey inside. I developed a hack to make the internal ones the same, so it pleased everyone!
How do you know when blondies are done?
You know when blondies are done, when the outside is coming away from the tin, and the inside just has a slight moisture mark when a knife is inserted and removed. It is hard to gauge this, due to different manufacturers of ingredients and different oven settings and temperatures, but the more you make them then you “just know.” There is a hack within my recipe, should you want to cook the internal ones further. l
