This “how to make flapjack” recipe can be made as the utterly divine lemon drizzle option or just leave out the lemon elements for a plain traditional buttery soft flapjack. This traybake is one of those oats recipes that is not only delicious, but is an easy flapjack recipe. With some simple ingredients you can make this great oats traybake recipe easy. What is there not to love about oats and golden syrup and lashings of butter? When people ask how to make flapjack from scratch, or how to make flapjacks soft and gooey, this is the recipe I give them. Like I said, you don’t have to add the lemon element. Switch it up and change it to chocolate chips, or other dried fruit. This isn’t your healthy flapjack, but when cutting into 12 pieces, it isn’t the worst either. That said, when I am running for 3 hours plus in the mountains of the Lake District, a slice or two of this helps with my fuelling!

Ingredients

Units Scale
  • 160g Salted butter
  • 80g Soft brown sugar
  • 4 Tbsp Golden Syrup
  • 250g Oats
  • 1 Lemon – Zest and juice
  • 2 Tbsp Ordinary Sugar (Like for tea and coffee)

Instructions

Pre heat your oven to 170 degrees Centigrade

Line a baking tin – I used a square one on the video which was 24cm x 22 cm

Melt the butter, brown sugar and golden syrup in a pan, until the sugar has dissolved.

Place the oats in a bowl and add in the lemon zest.  Then pour in the butter sugar mixture.  Mix properly ensuring all oats are covered.

Then place into the baking tray, spreading it out to the corner BUT NOT compressing down, as this makes the flapjack too hardened otherwise.

Cook for 25 minutes until golden brown.

Then take the lemon juice and add in the sugar.  Once the flapjack has cooked, pour over immediately and LEAVE it to set.  If you try to cut whilst it is too warm it has a tendency to fall apart.  Leave it to cool and its easier to manage.

Place in a tin or cake dome and it lasts and stays juicy for a good few days!
