Be blown away with in the comforting flavours of my Thai styled sweet potato soup recipe. This spicy and comforting dish combines the earthy sweetness of sweet potatoes with the richness of coconut milk, creating a taste explosion. If a soup could give you a hug then this is certainly one to do it with the warmth of aromatic Thai spices.  Sweet potato on its own, can be a little dull, but this takes sweet potato to new heights.  If you want to try a new soup recipe, I cannot encourage you enough to make this soup!

If you are also looking for easy soup recipes with a few ingredients, then this easy to follow sweet potato soup should hit the spot.  It freezes well, and is one of my “go to” soups that I keep in my freezer, should I start to feel unwell.  It’s one that makes me feel like I am nourishing my body but also tastes amazing. 

Many people ask me for winter soup ideas (and especially soup recipes healthy ones) to help them with healthier eating.  I think this winter soup recipe is absolutely perfect for chilly evenings or as a heartwarming lunch. Follow this easy sweet potato recipe, which transforms simple ingredients into a sensational Thai sweet potato soup. It’s time to liven up your tastebuds with each spoonful of this creamy, spicy masterpiece.


Ingredients

  • 3 medium-sized British sweet potatoes, peeled and diced
  • 1 can (400ml) coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Thai red curry paste (heaped tablespoon)
  • 1 teaspoon ground ginger
  • 1 litre of Vegetable stock (if you like thicker soup use less)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh coriander for garnish and single cream (optional – see other garnishes in the notes below)

Instructions

In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent.

Stir in Thai red curry paste and ground ginger, allowing the spices to infuse the oil for about a minute.

Add diced sweet potatoes to the pot, coating them in the mixture.

Pour in the vegetable stock (if you like thicker soup, use less stock and gradually add it) and bring the soup to a gentle boil. Reduce heat, cover, and simmer until sweet potatoes are tender (about 15-20 minutes).

Once the sweet potatoes are soft, use a hand blender or liquidiser to puree the soup until smooth.

Pour in the coconut milk, stirring well to combine. Season with salt and pepper to taste.

Simmer for an additional 5-7 minutes to allow the soup to re-heat.

Ladle the spicy sweet potato soup into bowls, garnishing with a swirl of single cream (if you are not vegan) and fresh coriander if desired.

Notes

You can add other things to your sweet potato soup.  I like to add pumpkin seeds on top, a few extra chilli flakes, occasionally paprika, and also cheesy croutons are nice!
