Sticky Ribs Recipe

Many of the ingredients used are in my store cupboard, which is always handy!  Do not forget you can use most of these ingredients to make BBQ chicken drumsticks too.  I have based the ingredients on a 1.5kg rack of ribs but if you want a smaller amount, then just alter the measurements of the ingredients accordingly.

I cook the sticky ribs in winter too, as party of a buffet.  At New Years Eve, they particularly go down well.  Make sure you make enough, as otherwise you might have some upset guests!

One handy point to note, is to consider a large disposable tin foil tray, as the sauce can be a nightmare to remove from an oven dish.

  • 1.5 Kg Pork ribs
  • 6 Tbsp of Redcurrant jelly
  • 3 Tbsp of Tomato Ketchup
  • 3 Tbsp of runny honey
  • 2 Garlic cloves crushed
  • 1/2 tsp of chilli flakes or chilli paste or smoked paprika (you choose which you want to use for heat)
  • 2 Tbsp Soy sauce.

Sticky Ribs Recipe Method

First make the marinade by placing all the ingredients (except pork ribs) into a bowl and mixing well.

In a large roasting tin place the ribs then pour the marinade over them.  Massage the marinade into meat and keep in a cool place for a few hours, turning every now and again.  Cover with foil, especially when in a fridge or it may taint the smell of other items in there.

When ready to cook, preheat the oven to 190 degrees centigrade.  Keep the foil on and cook for around 40 – 45 minutes, making sure you turn them every fifteen minutes or so.    Then remove the foil, and continue for a further 25-30 minutes until the sauce thickens and it becomes sticky.  When serving, pour any remaining meat juices and sticky glaze over them

A top tip here, is to place the roasting pan you have just used in hot soapy water immediately, otherwise you could be scrubbing for a while.  Alternatively use a disposable tin foil tray as mentioned above.
