Ingredients
- 600ml Milk
- 50g Butter
- 1 Onion finely chopped
- 2 Garlic cloves
- 6 Cloves
- 5 Peppercorns
- 1 Bay leaf
- 2 Thyme sprigs
- 100g White breadcrumbs (older good quality bread is ideal)
- 5Tbsp Single cream
- Pinch of freshly grated nutmeg
- Salt and pepper
Instructions
In a heavy bottom saucepan add the milk, butter, onion, cloves, peppercorns, garlic and herbs in a pan and gently simmer for 20 mins. If you have time, remove the pan from the heat and leave it all to infuse for an hour. Then you need to strain it and return the liquid to the pan. If you decided to let the milk infuse, bring the liquid up to a gentle simmer again. Next add the breadcrumbs and simmer for 3-4 mins. Stir in the cream and add your nutmeg. It should now thicken. Do taste for any additional seasoning of salt and pepper that may be required.
