For a refined sugar-free version, you can swap the sugar for 200 g finely chopped Medjool dates or 150–180 ml of date syrup. This gives the chutney a rich, natural sweetness with extra depth of flavour. If using dates, chop them small or blend into a paste before adding so they melt into the chutney. For balance, reduce the vinegar slightly to 200 ml. The result is a wholesome, naturally sweet chutney that still makes a perfect Christmas gift.
Ingredients
- 1 kg ripe mangoes (about 4 large, peeled and chopped)
- 2tbsp Olive Oil
- 2 medium onions, finely chopped
- 2 cloves garlic, minced
- 1 thumb-sized piece of fresh ginger, grated
- 250 g light brown sugar (Or see details above for 200g natural date/date syrup version)
- 250 ml cider vinegar (or white wine vinegar)
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp chilli flakes (adjust to taste)
- 1/2 tsp salt
- 100 g raisins or sultanas
Instructions
Heat a large heavy-bottomed pan over medium heat. Add a splash of oil, followed by the mustard seeds and cumin seeds. Let them sizzle until fragrant.
Stir in the onions, garlic, and ginger. Cook for 5–7 minutes until softened and golden.
Tip in the mango chunks, ground coriander, cinnamon, chilli flakes, and salt. Mix well.
Add the sugar or dates (as above), vinegar, and raisins. Stir until the sugar dissolves.
Reduce the heat and cook gently for 45–60 minutes, stirring occasionally, until thickened to a chutney consistency.
Spoon the hot chutney into sterilised jars, seal tightly, and allow to cool. Store in a cool, dark cupboard for up to 6 months.
