Ingredients
- 200g Self Raising Flour
- 75g Butter
- 75g Caster Sugar
- Pinch of Salt
- 1/2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 80g Mixed Dried Fruit With Mixed Peel
- 2 Eggs beaten
- 50ml Milk
Instructions
Pre-heat oven to 170 degrees centigrade fan. Prepare two baking trays with baking paper.
In a food processor place in the flour and the butter. Mix until it resembles fine breadcrumbs (see video if need be). You can do this by hand if you don’t have a food mixer. Using a rubbing in technique with light fingers into the butter and flour.
Then add the cinnamon, nutmeg, salt, sugar, and dried fruit. Mix by hand to incorporate or gently pulse to combine if using a food processor.
Then add the egg, and whilst pulsing or mixing together add enough milk to make it a sticky but firm mixture.
Spoon around 10 heaps on the two baking trays. Make sure that you spread them apart as they expand during baking. I then place in a lower section of my oven and bake for around 20 minutes. I check after 15. If they are firm at the base when tapped then I remove them and place on to a wire rack. Letting them cool gives them their “rock” name, and the wire rack helps to bake the bottoms of them hollow when tapped.
Notes
Lovely as they are, they taste good with butter or cream and jam.
