Description

Indulge in the autumn season with our delectable autumn cupcakes recipe. These fall-flavoured treats are sure to satisfy your autumn cravings with delightful caramel and sticky toffee pudding cupcake ideas. Bake up a storm this autumn and create the most mouthwatering cupcakes that everyone will love.  Autumn baking is one of my favourite times to be in the kitchen, and this autumn cake making idea, uses my recent honeycomb recipe as inspiration.

These also make a great idea for halloween cupcakes.

 


Ingredients

Units Scale
  • 150g pitted dates, chopped
  • 150ml boiling water
  • 85g butter, softened
  • 175g light brown sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 175g self-raising flour
  • 1/2 tsp baking powder
  • 120g butter, softened
  • 375g icing sugar
  • 23 tbsp toffee sauce
  • Honeycomb Decoration (optional)

Instructions

Preheat your oven to 180°C fan.

Line a muffin tin with cupcake cases.

In a bowl, place the chopped dates in and then pour the boiling water over the dates and let them sit for about 10 minutes until they soften and plump up.

In a separate mixing bowl, cream together the softened butter and light brown sugar until light and fluffy. This may take a few minutes.  You may need to stop the mixer and take a spatula around the edge a couple of times.

Beat the eggs into a jug and add the vanilla extract.  Mix together.  Then add to the mixer with the sugar and butter.

Sift the self-raising flour and baking powder, and then add the into the wet mixture. Gently mix until you have a smooth cupcake batter.

Add the softened date mixture (including the liquid) to the batter and fold until combined.

Spoon the cupcake batter into the cupcake cases, filling each one about two-thirds full.

Bake in the preheated oven for approximately 20-25 minutes or until a toothpick inserted into the centre of a cupcake comes out clean.  Then let them properly cool on a wire rack.

In a mixing bowl, beat the softened butter, icing sugar and vanilla extract until creamy and smooth.

Pipe the cupcakes with the buttercream using a piping bag or a spatula.

Drizzle the tops of the cupcakes with toffee sauce and honeycomb pieces.

Notes

You could use them for bonfire night too if you wish.
