Healthy Flapjack Recipe

Healthy flapjack recipe, which is packed with great ingredients. This no butter flapjack recipe, is also quick to make. This is also a no bake flapjack recipe, which is ideal if you are wanting to introduce younger children to cooking.

I have included some dark chocolate chips into my healthy flapjack recipe, but don’t be afraid to swap any ingredient like dried cranberries etc for something else.

When I prepare my healthy flapjack recipe, I make it slightly thinner than a traditional flapjack. If making it in a deeper smaller tray, (as a thicker slice) it may take a little longer to set in the fridge.

Ingredients

  • 160g Peanut Butter
  • 160g Honey
  • 2 tsp Vanilla Extract
  • 200g Oats
  • 50g Desiccated Coconut
  • 130g Dates chopped
  • 70g Toasted Mixed Seed
  • 40g Cranberries
  • Optional – 100g Dark Chocolate Chips

Instructions

Place the peanut butter, honey and vanilla extract in a saucepan, and gently heat and mix through until it is smooth.  Take off the heat and place to one side.

Place the remaining ingredients in a large bowl and stir to combine.  Then add the peanut butter mix to it and mix with a spoon for a while to ensure that everything is coated, and properly combined.  It takes a few minutes doing this, but it will all come together eventually.

Get a lined baking tray, and pour the flapjack recipe mixture into it.  Ensure that you smooth down and push into the corners.  Place the flapjack in the fridge ideally overnight until it sets.  You can then cut into squares.   It needs a good time to set and may have a slightly more crumbly texture, but this is because this is a no butter healthy flapjack recipe, and so does not contain the butter, golden syrup and other sugars to hold it together.  So make sure you pack it down thoroughly and cool for a good length of time.

Store in a fridge in a sealed tub.
