Creamy mac and cheese recipe

Creamy mac and cheese recipe, that is tasty and quick to make!  In fact this mac and cheese recipe is so easy, you will not think of buying a ready made or packet one ever again!

This baked delicious soul food is one of those dishes that can be made quickly and cheaply, but has such fabulous taste.  it is one of the ultimate comfort foods, and one of my husbands most favourite dishes.

Made on a stove top, this gooey mac and cheese needs to have some good cheese to make it shine.  I have been known to use up the spare ends of cheese in the fridge, and love to add parmesan in too for that added flavour.  This is a great vegetarian dish, but you could experiment if you so wished and add bacon, spring onions and other items in.  That said, my husband likes it just the way it is!

You can make this as one dish, or even make small ramekins of it.

Ingredients

Units Scale
  • 150 g Macaroni pasta
  • 35 g plain flour
  • 50 g butter
  • 400 ml milk (approx you may not need all of this)
  • 120 g grated cheese (please see my narrative on the previous page, as I like to use up a mixture of cheeses. If you don’t have a mixture then a good strong cheddar is fine.)
  • 1 tsp of mustard (optional)
  • Pepper
  • Any other ingredients you may like such as peas, cooked broccoli, cooked bacon pieces.

Instructions

Bring a large pan of salted water to the boil and add the macaroni according to the packet instructions.  This usually takes in the region of 12-13 minutes.  Whilst the pasta is cooking take a heavy bottomed saucepan and melt the butter on a medium heat.  Add the flour to make a roux and cook through for a few moments, ensuring that you continue to stir.  Gradually whisk in the milk little by little to stop the sauce going lumpy.  Then add the cheese and the mustard and stir until all combined.  Check for seasoning and add some pepper.  Usually salt is not required, if you are using good quality strong cheese.

Once the pasta has cooked, drain and place back in the saucepan.  Add the cheese sauce to the macaroni and stir well to make sure everything is coated.

You can serve it up at this point, or you can put the macaroni cheese in little ramekins, sprinkle over breadcrumbs and place under the grill.
