Beef Casserole

Beef casserole recipe that is just pure comfort food on a plate. This does take around 3 hours baked in the oven, but you could always put your slow cooker to use and cook it for longer in that. Sometimes I just leave mine on low all day and then come home to a delicious feast for the evening! The smell when you walk through the door is a proper greeting for you. You could eat this with roast potatoes, cous cous, or my absolute favourite being mashed potato.

This beef casserole recipe is easy to make. I use Guinness or stout for added flavour, but you could substitute and use red wine instead.

Beef Casserole Ingredients

  • 1 kg of Stewing beef/steak cut into good sized chunks
  • 1 Large onion roughly chopped
  • 8 Carrots peeled and cut into large chunks
  • 2 tbsp oil
  • 1 Large heaped tbsp plain flour
  • 500 ml of Guinness or other stout
  • 1 Tsp of redcurrant jelly or cranberry sauce
  • 1 Tbsp of liquid beef concentrate stock 
  • 2 Celery sticks, chopped chunky
  • 3 Bay leaves
  • 1 Sprig of thyme
  • Salt & Pepper

Beef Casserole Method

Pre-heat your oven to 140 degrees centigrade.

If you do use your slow cookers for this,  just make sure that you carry out the first part of this recipe browning the meat etc. and then transfer to the slow cooker for a few hours.

Heat the oil in a large casserole pan, then brown the meat in batches and then set aside.  It is best to seal off your meat in batches, as otherwise the meat could steam and not brown properly.  Once the meat has been browned take it out of the pan and set it to one side.  Then add the onions, carrots, and celery.  Once they have browned slightly you need to add the flour and mix well.  This action of adding the flour now, helps to thicken the casserole without lumps.  Put the meat back into the pan and then add the Guinness/stout/red wine, stock concentrate, redcurrant jelly/cranberry sauce, bay leaves, thyme and a good grinding of pepper.

Cook in the oven with the lid on for around two and half to three hours, until the meat is tender and the vegetables are cooked. I give it a stir every once in a while. When cooked, taste to see if you need to add any salt before serving.

Leftovers of this freezes well too. Thats if you have any leftovers!
