Ingredients
- 150g Self-raising flour
- 100g Butter (melted and cooled slightly)
- 100g Caster sugar
- 2 Large eggs
- 1 Tsp Vanilla extract
- 1–2 Tbsp Milk
- 50g unsalted butter, softened
- 100g icing sugar, sifted
- 1 tsp vanilla extract
- 1–2 tbsp milk
- 80g Cadbury Easter Mini Eggs
- 80g whole Cadbury Easter Mini Eggs
- 2 Tbsp Icing sugar (Vanilla Icing Sugar THE best) for dusting
Instructions
Preheat your oven to 170°C. Line a 6 hole muffin tin with paper cases.
In a large bowl, sift and add the flour. Add in the sugar, the eggs, vanilla extract and mix gently but not too much, then add in the melted butter. Mix together but DO NOT over mix.
Divide the batter evenly between the muffin cases, filling each around two-thirds full.
Bake for 20-25 minutes until risen, golden, and a skewer inserted into the centre comes out clean. Allow to cool completely on a wire rack.
(If you want just plain vanilla cakes, just let them cool slightly, and then dust with icing sugar. If you have never tried vanilla icing sugar before, well this is your opportunity. It’s amazing! I’ve placed a link in my affiliate links with my amazon storefront, where you will see a video on it with more ideas for use. I then cut the vanilla cakes in half and spread a little butter over. Trust me it’s a game changer. It’s a bit like madeira cake.)
While the muffins are cooling, prepare the buttercream. Place the softened butter, icing sugar, vanilla extract and 1 tbsp of milk into a bowl, beating until light and fluffy. Add the extra tbsp of milk if needed for a smoother consistency. Place 80g of Mini Eggs in a sealed food bag and crush using a rolling pin, leaving some larger chunks for texture. Then fold this into the buttercream.
Once the muffins are completely cool, use a small knife or apple corer to cut out a small hole in the top of each muffin, about 2cm deep.
Pipe or spoon the buttercream into the centre of each muffin, filling the hole completely.
Top each muffin with 2-3 whole Mini Eggs. Finish with a light dusting of icing sugar (even the vanilla icing sugar) just before serving.
Storage
Store in an airtight container at room temperature for up to 3 days.

Vanilla Cake vs. Yellow Cake What Is The Difference?
While vanilla cake and yellow cake are similar and often confused with each other, they’re not exactly the same. Here’s a breakdown of their differences:
Main Differences
Vanilla cake is defined by its flavour, while yellow cake is defined by its colour and richness. The key distinctions are:
- Ingredients: Yellow cake typically uses more egg yolks (and fewer whites) than vanilla cake, giving it that distinctive yellow colour and richer texture.
- Flavour Profile: Vanilla cake focuses on the vanilla flavour, which can be incorporated into any colour cake. Yellow cake has a buttery, custard-like flavour in addition to vanilla.
- Colour: Vanilla cake can be white (when made with just egg whites) or slightly yellow (with whole eggs). Yellow cake is intentionally yellow from extra egg yolks.
- Texture: Yellow cakes tend to be more moist and dense with a finer crumb, while vanilla cakes can range from light and fluffy to more substantial.
When to Use Each
Yellow cake works beautifully with chocolate frosting and is often the cake of choice for birthdays. Vanilla cake pairs well with virtually any frosting and is more versatile for different occasions.
Both cakes use vanilla extract for flavouring, which contributes to the confusion between them, but their composition and characteristics make them distinct desserts.
Who invented vanilla cake?
The exact origin of vanilla cake is difficult to pinpoint to a single inventor, as cakes flavoured with vanilla have evolved over centuries through various culinary traditions.
Vanilla as a flavouring ingredient has been used since the 1500s after it was brought to Europe from Mexico by Spanish conquistadors. The Totonac people of Mexico were likely the first to cultivate vanilla, and the Aztecs used it in a chocolate drink.
The concept of cake itself dates back thousands of years, with early versions appearing in ancient Egypt. However, what we recognise as modern cake with vanilla flavouring began to emerge in Europe during the 17th and 18th centuries when vanilla became more widely available as a flavouring agent.
The earliest published recipes for cakes specifically calling for vanilla extract appeared in European cookbooks in the 1800s, as vanilla extract became commercially available. By the Victorian era (mid-to-late 1800s), vanilla had become a popular cake flavouring.
Rather than having a single inventor, vanilla cake represents the culmination of culinary evolution spanning multiple cultures and time periods, becoming more refined and standardised with advances in baking technology and ingredient availability.
What is French vanilla cake?
French vanilla cake isn’t a specific traditional French recipe, but rather refers to a rich vanilla cake made using a French vanilla flavouring approach. The term “French vanilla” actually describes a particular flavour profile rather than a geographical origin.
The key characteristics of French vanilla cake include:
- Egg Yolks: French vanilla cakes typically contain more egg yolks than regular vanilla cakes, giving them a custard-like richness and yellowish colour
- Flavour Profile: The taste is richer, creamier, and more complex than basic vanilla cake
- Preparation Method: Some recipes prepare the batter using techniques inspired by French baking traditions, such as more thorough creaming of butter and sugar
The term “French vanilla” comes from the traditional French way of making vanilla ice cream with egg yolk custard base, which gives it that distinctive rich, creamy flavour. The cake adopted this name because it aims for a similar flavour profile.
French vanilla cake pairs wonderfully with various frostings, though cream cheese frosting, buttercream, and chocolate ganache are particularly complementary to its rich flavour.
