Ingredients
- 250g cannellini beans (I use canned as it saves an overnight soaking time)
- 25g Butter
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 leek, cleaned and chopped
- 1 bay leaf
- 1 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
- 1 teaspoon dried rosemary or sprig of fresh chopped up
- 1 litre vegetable broth
- 400g canned chopped tomatoes
- Salt and pepper to taste
- 2–3 leaves of Cavolo Nero shredded (or you could use Kale)
- Grated Parmesan cheese, for serving (optional)
- Crusty bread, for serving (optional)
Instructions
In a large soup pot or Dutch oven, heat the olive oil and butter over a medium heat. Add the chopped onion, garlic, carrots, celery, and leek. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.
Add the bay leaf, thyme, and rosemary to the pot. Stir for a minute to release their fragrance.
Add the drained white beans to the pot. Stir to combine with the vegetables and herbs.
Pour in the vegetable broth and canned chopped tomatoes. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 1 hour or until the vegetables are tender and cooked through. Stir occasionally.
I like to add in the shredded Cavelo Nero around 5 minutes before the end of cooking. Taste the soup and season with salt and pepper as needed.
Ladle the hot soup into bowls, and if you like, sprinkle some grated Parmesan cheese on top. Serve with crusty bread for a complete meal.
