I have started to use my slow cooker a lot more just recently, and this is not just for stews and curries, but for desserts such as rice pudding. Many of us will enjoy this on its own, with strawberry jam, cinnamon or with a fruit compote. When in Greece, I have often found that this is served for breakfast, sometimes warm but sometimes cold. Cooking time does vary depending on your slow cooker, so just keep an eye on it and stir every now and again.
Making my own slow cooker rice pudding is as I have mentioned, great for cost as well. A can of quality rice pudding is getting quite expensive. The tin only usually feeds two at a push as well, so if you have a family of four, then this recipe not only works out nicer because it is home made, but cheaper too.
I have not tested with using other types of milk like coconut or almond milk myself yet. It will be interesting to know if they work well too. With people having different allergies, the range of alternatives available on the market is getting better. Ingredients
110g pudding rice
25g granulated sugar
25g butter and a little extra for greasing
1.2 litres whole milk
Grated nutmeg
Optional – Single cream, jam, fruit, cinnamon etc
Grease the bowl of the slow cooker with a little butter.
Instructions
Add the milk, sugar, butter, nutmeg and rice. Stir and then place the lid on. Turn the slow cooker on medium-high and cook for 3 hours, or until the rice is tender. Every now and again stir the mixture. I stir mine every hour just like in the video. Do eat as soon as cooked, or the rice will continue cooking and can go thicker and slightly mushy.
If the mixture feels too thick, you can add a little warm milk to loosen it up a bit. I find different makes of rice can alter the cooking timing slightly.
Once cooked, you can add a splash of single cream ( I think it is creamy enough as it is) and a teaspoon or two of strawberry jam or other items.
Notes
It is always best to add any cream after the slow cooker time, as it can occasionally go a little split if cooking for hours.
It usually takes around 3 hours to cook. You can always try a small spoonful after 3 hours to see if the rice is cooked and tender.
Depending on the heat, model and make of your slow cooker the cooking time can vary.

Why is rice pudding healthy?
As you can see from the nutrition factsheet, this rice pudding recipe has approx 38% of your calcium requirements, and provided you don’t put any additional extras in, it is 301 calories for a decent sized bowl. Many puddings can run into 600 calories and more, so this makes it a great alternative.
Can you put double cream in a slow cooker?
It depends a lot on the recipe, but I find it is best to add any cream at the end of the cooking time. That way, it will not split. I also add the cream to cool the rice pudding down, because it does come out of the slow cooker piping hot.
