No knead bread recipe that could not be any more easy! If you want to make bread from scratch but are worried about the kneading and proving, then this recipe and video on how to make homemade bread should help giving you bread making confidence!

This is a style of soda bread. There are so many variations of Irish soda bread now, that it is hard to tell the more authentic recipes from those which have been adapted. My good Irish friend said that some people now add butter, egg and even raisins to their recipe. Some make it wholly with plain flour, but as a child he would recall his grandmother making it with a more bran like texture flour. I guess the quality of flour is something to consider when making soda no knead bread. There is even a website Society for the Preservation of Irish Soda Bread, which is most informative and worth a look, especially if you love a bit of food history like I do. They even quote “Flour, Salt, Baking Soda, Buttermilk…..   Anything else added makes it a tea cake!”

Irish soda bread is traditionally made in what looks like a cast iron pot called a Dutch oven. Many consider this to be a cast iron casserole or stew pot with a lid on. This recipe does not need a Dutch oven, and uses a simple baking tray instead.

Ingredients

Units Scale
  • 250g Plain white flour
  • 250g Plain wholemeal flour
  • Extra flour (either of the above) for dusting work surface and the dough
  • 1 Tsp Bicarbonate of soda
  • 1 Tsp Salt
  • 400ml Buttermilk (If you do not have buttermilk see my tips below the recipe)

Instructions

In a bowl mix together both flours. Then add in the salt and bicarbonate of soda, and mix again thoroughly. You don’t want any pockets of salt or bicarbonate of soda, in the bread.   Add in the buttermilk and stir with a wooden spoon, until the dough starts to come together. 

Tip the mixture out onto a floured surface and gently bring the mixture together.  Unlike many other bread recipes, you do not need to knead this one but just bring it together into a ball shape. 

Gently flatten the top with the palm of your hand and then cut a cross into the top (make sure you do not cut all the way through) so it shows defined quarters.  Dust the top of the dough with more of the flour (you can use the plain or wholemeal flour for this) and then set aside for 30 minutes, whilst you pre-heat your oven to 200 degrees centigrade. Once 30 minutes has passed, bake for around 30 minutes. 

You can check it is cooked by tapping the base, which should sound hollow.

Place on a wire rack to cool properly. It will last for around a day or two, but always best eaten on the day of baking.

How to make buttermilk UK

Making buttermilk is easy. In fact I often use it in different types of pancake mixtures, chicken dishes, scones and this soda bread, no knead bread recipe.

Take 250mls of Whole Milk (Not Semi) then add in 1 tablespoon of lemon juice. If you leave it for 5 or so minutes it will curdle.

For this no knead soda bread recipe you will need a total of 400mls, so two batches of the above will leave you some spare. It won’t last for long though, so probably not worth keeping the remainder unless you are going to make more recipes needing buttermilk.

How long do you leave no knead bread to rise?

This recipe requires 30 minutes of time to rise. However, I once was in a rush and didn’t leave any rising time, so I don’t think it needs much time at all.
