Learn how to make a comforting butter bean pie with juicy tomatoes, aromatic garlic, and a golden shortcrust pastry top. This hearty vegetarian recipe is perfect for family dinners, meal prep, or cosy weekend cooking. Packed with plant based protein, budget friendly ingredients, and Mediterranean inspired flavours, this butter bean pie is a delicious twist on classic comfort food.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stick, diced
  • 1 can (400g / 14oz) chopped tomatoes
  • 2 cans (400g / 14oz each) butter beans, drained and rinsed
  • 2 tbsp tomato purée
  • 1 tsp dried oregano (or thyme)
  • 150ml (1/2 cup) vegetable stock
  • Salt & freshly ground black pepper
  • Small bunch fresh parsley, chopped
  • For the pastry top:
  • 250g/9oz of Shortcrust Pastry or purchase shop ready made.
  • 1 egg, beaten (for glaze)

Instructions

Heat olive oil in a large pan. Sauté onion, carrot, and celery for 8–10 minutes until soft.

Stir in tomato purée and oregano. Add chopped tomatoes, vegetable stock and garlic. Simmer 10 minutes until thickened.

Stir in butterbeans and parsley. Season well with salt and pepper. Remove from heat and allow to cool before placing pastry on.

Preheat oven to 200°C (180°C fan) / 400°F.
Spoon the filling into a pie dish. Drape shortcrust pastry over the top, trimming excess. Press edges with a fork to seal. Cut a small slit in the centre to let steam escape.

Brush pastry with beaten egg. Bake 25–30 minutes until golden and crisp.

Let rest for 5 minutes before serving. Pairs beautifully with a crisp green salad or roasted vegetables.
