Chickpea fritters recipe, that blew me away whilst I was in the Greek island of Rhodes this summer. I wish to thank the Olympic Palace Hotel and their chef, for the opportunity to cook with him, and for allowing me to print this recipe.
This chickpea fritter recipe tastes fresh and uses simple ingredients. It is also an easy recipe suitable for vegetarians and can be easily adapted for vegans if they don’t use any Greek yoghurt dip.
There is something so satisfying about these spicy and crispy fritters. Its origins are vague. With Greek, Middle Eastern, Indian and Italian’s all having their own twist on the recipe. They also have many uses. I shall be making them for parties as canapés, but you could have them as a starter with a dip, or as a main with salad.
So this chickpea fritter recipe, is not only easy and versatile, but also inexpensive and nutritious.

Description

Ingredients
- 1kg Chickpeas
- 100g Plain Flour
- 1 Onion diced
- 1 Fresh tomato grated
- 1 Courgette grated
- 1 Tbsp Oregano
- 3 Spring onions chopped
- 2 Handfuls of parsley finely chopped
- 1 Handful of dill
- 1 Tbsp Ground cumin
- Water
- Salt & Pepper
- Olive Oil (not extra virgin) for frying
Instructions
Place the chickpeas in a bowl of water and leave overnight in order to soften.
Strain and rinse. Crush the chickpeas using a blender. Remove the mixture and place it in a bowl. Add the rest of the ingredients and mix well.
Heat the olive oil in a frying pan. When the oil is hot, shape the mixture into patties which are around 5cm in diameter. Add to the pan and fry for 3-5 minutes until golden.
Make sure that you do the patties in small batches and no overload your frying pan. Putting too many in at once, means that the patties will steam, and not go crispy.
Once the patties are golden, transfer to a tray with kitchen paper, so that any excess oil can be absorbed. Serve as they are, with salad or try a dip of greek yoghurt, with mint and paprika.
