Rocky road recipe that is super easy to make! Although this is a basic rocky road recipe, you can see a slight alteration to the recipe, should you wish to make the Christmas Rocky Road. Chocolate, marshmallow and biscuit, it’s a combination of ingredients that is so irresistible. There are lots of ways you can vary this recipe too. For instance why not try mini eggs at Easter, turkish delight at Christmas, or white chocolate in the summer months. This simple classic rocky road recipe can use so many different ingredients!
It is easy to transform this traditional classic, into something delicious and amazing. The best part of this rocky road recipe is that it is no bake, simple and homemade. In fact, I’ve not tried a shop bought one that is a patch on the homemade version!
One of my secret tips to take this rocky road recipe to another level, is to add broken crunchy bars and maltesers. Oh my gosh, it is like I have been transported into sweet heaven.
Although it will never be healthy or nutritious, it is one of those treats that just have to be made and indulged on every now and again. Life is too short otherwise!
I have also seen other rocky roads, that have a final drizzle of white chocolate over the top once it has been cooled. So there are lots of options, so go experiment. In fact below the main recipe here is my Christmas Rocky Road video. This is where I have done a Rocky Road Christmas Pudding! It has the extra’s of further chocolate, butter and white chocolate.
Ingredients
- 100 g butter
- 300 g dark chocolate (70% cocoa best) chopped up small – I like to do half milk chocolate and half dark chocolate. I use Green & Blacks chocolate for most baking.
- 2 tbsp of golden syrup
- 150 g rich tea biscuits (broken up into chunks) or Biscoff biscuits… or use any biscuit to hand that has crunch!
- 100 g mini marshmallows
- Optional – handful of chopped cherries
- Optional – handful of raisins
- Optional – handful of chopped nuts
- Icing sugar for dusting (optional).
Christmas Rocky Road Additional Ingredients
You just need a couple of extra ingredients and a slightly different method for the shape, but the video will explain all. I used an extra 150g of milk chocolate, a knob of butter (not margarine) and 80g of white chocolate.
Instructions
For the Christmas Rocky Road Pudding follow the video! Below is the basic recipe for making a tray bake.
In a saucepan melt the butter, then add the chocolate and golden syrup. When the mixture has melted add the chopped biscuits and marshmallows. You can also add the optional ingredients at this point too. Using a spatula mix well, so that everything is coated in the chocolate mixture.
You can use a foil tray or a brownie tray lined with baking paper. Place the mixture into the tray, press it down slightly then place into the fridge for around 3 hours.
Once cooled properly. Cut the mixture into segments with a sharp knife. Dust the segments with icing sugar if you want using a sieve, or have it as it is.
