Ingredients

Units Scale
  • 200g dark chocolate (70% cocoa works best)
  • 150g salted butter
  • 250g caster sugar
  • 2 large eggs + 1 egg yolk
  • 1 tsp vanilla extract
  • 125g plain flour
  • 30g cocoa powder
  • Chocolate chips (optional)

For the buttercream frosting

  • 200g Icing sugar (sifted)
  • 35g Butter
  • 15g Cocoa powder (sifted)
  • 3045ml Milk

Instructions

  1. Preheat your oven to 180°C (160°C fan) or Gas Mark 4. Grease and line a 20cm square baking tin with baking paper. Leave some overhang for easy lifting later.  If using the Our Place Wonder Oven, just pre-heat for about 2 minutes prior to cooking.  You will not need to use baking paper etc in the Our Place baking tin.  You just need to butter/grease the pan.
  1. In a heatproof bowl, melt the dark chocolate and butter together over a pan of simmering water (double boiler method). Stir until smooth, then remove from heat and let it cool slightly.
  1. In a mixing bowl, whisk the caster sugar, eggs, and egg yolk together until the mixture becomes pale and thick (this takes about 2–3 minutes). Stir in the vanilla extract.
  1. Gently fold the cooled chocolate mixture into the egg mixture. Sift in the flour and cocoa powder.  Fold everything together until just combined.  Do not over mix!
  1. Pour the brownie batter into your prepared tin and smooth the top. Bake for 20–25 minutes, or until the edges are set but the centre still has a slight wobble. A skewer inserted in the middle should come out with moist crumbs, not wet batter. If using the Our Place Wonder Oven, they cook in approx 10-15 minutes. 
  1. Once baked, let the brownies cool in the tin for 10 minutes, then transfer them to a wire rack. Resist the temptation to cut them warm; they’ll firm up as they cool.  Plus if you use my buttercream frosting as below, you will need to ensure that the brownie base is properly cooled, before decorating.
  1. Drizzle the brownies with melted white chocolate, sprinkle on some festive decorations, or dust them with icing sugar for a snowy effect. Slice into squares or festive shapes and enjoy!
  1. For the buttercream frosting, you simply take the icing sugar, butter, cocoa power and 30ml of the milk, and whisk up until light and fluffy.  If it is still too stiff in texture add the remaining 15ml of milk.  This could take 3-5 minutes.  Then spoon on top of the cooled brownies

  • Use high-quality chocolate for the best flavour.
  • Slightly underbake for maximum fudginess
