Ingredients

  • 1.5 kg yellow onions, thinly sliced
  • 60g butter
  • 2 tbsp olive oil
  • 2 tsp sugar
  • 2 cloves garlic, crushed
  • 1.5 litres beef stock
  • 250ml dry white wine
  • 2 bay leaves
  • Salt and black pepper, to taste
  • Baguette slices
  • 100g Gruyère cheese, grated

Instructions

1.Begin by melting butter and olive oil in a large pot over medium heat. Add the sliced onions and sugar, stirring occasionally until the onions are deeply golden and caramelised. This process usually takes about 1½ hours

2. Stir in the garlic during the last 2-3 minutes of onion caramelisation. Pour in the white wine to deglaze the pot, scraping up any bits from the bottom. Let the wine simmer until it has mostly evaporated.

3. Pour in the beef stock, add bay leaves, and season with salt and black pepper to taste. Bring the soup to a gentle boil, then reduce the heat and let it simmer for an additional 20-30 minutes to allow the flavours to come together.

4. Preheat your oven’s grill. Arrange baguette slices on a baking sheet and toast them under the grill until golden brown on both sides.  Then add some Gruyère cheese on top and grill until until the cheese is melted and golden brown, creating that irresistible bubbly crust.

5. Discard the bay leaves, then ladle the hot soup into bowls. Place a couple of the toasted cheesy baguette slices on top.

6. Garnish with fresh parsley if desired. Serve piping hot and enjoy.
