Toad In the Hole Recipe

When you need some comfort food to hit the spot, toad in the hole is a great recipe to have. In the winter months it is a good to dish to warm you up. Children also seem to love it as well.  You could substitute meat sausages for vegetarian ones too, which has always been welcomed by my veggie friends.   As a variation you could add some onion segments with the sausages. Alternatively make a great onion gravy that you can pour over. Check out the recipe for Colcannon which goes fabulously with this dish!

Quality sausages are a must for this. As I am from Lincolnshire, I find the Lincolnshire sausage very hard to beat. I have a great local butcher whose sausages are truly amazing. I love the sage and slight spice of a Lincolnshire sausage.

Another tip for this, for a good rise with the batter, is to make the batter ahead of cooking. By doing this and putting it in the fridge, it makes it rise against the hot sausage pan.

Toad In The Hole Recipe Ingredients

8 pork sausages or vegetarian equivalent.
1 tablespoon vegetable oil
225g plain flour
4 eggs
250ml milk
Salt and pepper to taste

Toad In The Hole Recipe Method

Preheat the oven to 200 degrees C

Pour the oil into the bottom of a baking dish, and arrange the sausages over
in a single layer. Bake for 10 minutes in the preheated oven.

In a medium bowl, whisk together the flour, eggs and half of the milk until smooth. Gradually mix in the rest of the milk until a smooth batter forms. Season with salt and pepper.

Remove the sausages from the oven, and pour the batter over them until the sausages are 3/4 covered. Return to the oven, and bake for 35 minutes, or until the centre is risen and golden.

Great with onion gravy and colcannon.
