Ingredients
- 2 Chicken breasts that are skinless, boneless and cut in half
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
- 100ml Chicken Stock (Hot)
- 1 Tbsp Dried Italian Herbs
- 1 Tbsp Corn starch
- 4 Spring Onions Chopped
- 100g Chopped Tomatoes (from a can)
- 1 Garlic Clove (Large) crushed
- 100ml Evaporated Milk
- 1/2 Tsp Salt
- 1/2 Tsp Black Pepper
- 2 Tbsp Double Cream (Optional Extra)
Instructions
In a frying pan add the olive oil and the butter. Then on a medium heat pan fry the chicken breast sections until they are golden brown.
Whilst the chicken is cooking in your frying pan, take the hot chicken stock in jug, and add the corn starch and the dried Italian herbs and mix properly. Set to the side.
Once the chicken is golden brown on all sides, place into the slow cooker along with any pan juices. Then add the spring onion, tomatoes, garlic, salt, pepper, chicken stock with herbs and evaporated milk. Do not add the cream yet until the end of cooking.
Cook for around 3-4 hours until the chicken is cooked through and the sauce has thickened. This all depends on your size of slow cooker, how hot it gets etc. If you feel that the sauce is getting too thick, then just add a little hot kettle water.
At the end of cooking add in a couple of tablespoons of double cream to balance out the flavours and smooth the sauce.
Notes
A nice addition is to add a few chilli flakes as well for a little kick, or add some freshly torn basil leaves at the end.
