Ingredients
- 1 large onion finely chopped
- 1 medium potato peeled and diced
- 1 large head of broccoli including the stalk roughly chopped small
- 2 garlic cloves crushed
- 1 litre vegetable stock
- 100 ml double cream optional
- 1 tablespoon olive oil or butter
- Salt and black pepper to taste
- A small pinch of nutmeg optional
Instructions
- Heat the olive oil or butter in a large saucepan over a medium heat. Add the onion and cook gently for 8 to 10 minutes until soft sweet and translucent.
- Add the garlic and cook for 1 minute until fragrant.
- Add the potato and chopped broccoli stalks and cook for 2 minutes. Stir in the broccoli florets.
- Pour in the vegetable stock and bring to a gentle simmer. Cook for 15 minutes until everything is completely soft.
- Remove from the heat and blend until smooth.
- Stir in the cream if using then season well with salt black pepper and nutmeg.
- Warm gently and serve hot with crusty bread grated cheese or both if you are feeling sensible.
