Ingredients:

For the Flatbread:

  • 280g self-raising flour
  • 250g Greek yoghurt

For the Garlic Butter:

  • 50g butter, melted
  • 2 garlic cloves, crushed

 

For the Filling Idea:

  • 1 cooked chicken breast, sliced
  • 150g frozen roasted vegetables
  • 1 red onion, sliced
  • 1 tbsp olive oil
  • 5 tbsp mayonnaise
  • 1 tbsp sriracha sauce

Instructions

Make the Flatbread Dough:

In a large bowl, mix the self-raising flour and Greek yoghurt until a dough forms.

Dust a surface with flour and knead the dough for a few minutes until smooth.

Shape into a ball and divide into four equal portions.  Four portions is four large flatbreads.  So if you want smaller flatbreads, cut into more portions.

Roll each portion out using a rolling pin to form a flatbread shape.

 

Cook the Flatbread:

Heat a large frying pan over medium heat (no oil needed).

Cook each flatbread for 2-3 minutes per side until golden brown and slightly puffed.

Brush the warm flatbreads with melted garlic butter for extra flavour.  To do this simply place the butter and garlic in a saucepan and heat through until all melted.

 

Prepare the Filling If Choosing To Try The One In The Video:

Preheat the oven to 180°C (350°F).

Place the frozen roasted vegetables and sliced red onion on a baking tray.

Drizzle with olive oil and roast for about 20 minutes until tender.

 

Assemble the Flatbread Sandwich:

In a small bowl, mix mayonnaise and sriracha sauce.

Spread the sauce over the flatbread, then add sliced chicken and roasted vegetables.  Or if you really love the sriracha sauce then place the sauce on top of the chicken and roasted vegetables.  I just love the sauce, so I go heavy on it (my bad.)

Fold and enjoy as a sandwich or serve open-faced.
