Ingredients
For the cupcake bases:-
- 100g Plain Flour
- 140g Caster Sugar
- 1.5 tsp Baking Powder
- 40g Butter that is soft
- 120ml Milk
- 1 Large Egg
For the icing glaze:
- 125g Icing Sugar
- 15–30ml Water
- Food colourings, any flavouring and decorations of your choice
Instructions
You can use a mixer or do this with a hand whisk/by hand.
Use a muffin tin and place some baking cases inside. Pre- heat your oven to approx 160 degrees centigrade (fan)
Place the flour, butter and sugar into a bowl. On a slow speed combine it all, until it looks like a gritty texture. Then add in the baking powder and combine again. Then add the milk and egg and mix until it comes together. Do not over mix this, but ensure that everything is combined. I like to run a spatula around the outside edge of the bowl, to make sure there are no pockets on ingredients left.
Then spoon the cake mixture in (or use a batter dispenser like I do in the video), until it is just under half way up in the muffin cases. I don’t overfill the cases as I want a level top, unlike when I do a buttercream whipped topping, where a peaked cupcake base is fine.
Bake for around 15-20 minutes, until the sponges have risen and they are springy to the touch. If the bases have slight peaks, just push them down or you can take a serated knife and level off the tops.
Then let them cool before adding the glaze.
For the glaze take 125g sifted icing sugar and add in 15ml of water. Start to mix. Then you add a little more water, but not too much. With the brand of icing sugar I use, it takes around another 15ml. However with other brands I’ve found it has only taken 5ml. You will get a good idea of how I do the icing and the technique I use, in the video.
When doing multiple colours, I place some of the white icing glaze into another bowl and add some colouring and flavouring to it. I quite like a lemon or vanilla tasting icing, but just make sure you don’t add too much of the colourings or flavouring or it may be too runny. If this happens just add more icing sugar. I then place a good teaspoon of the glaze over the top and smooth and roll it round. Then I add my decorations on top. Leave them to set on a wire rack.
