Making slow cooker lemon curd takes the headache out of making mistakes with your lemon curd. I have included some affiliate links for my gadgets I use in making the recipe.  One particular favourite (and to which I am forever being asked about) is my zester.  It is a great one. Plus my jars which I place my lemon curd into are also there.

Ingredients

  • 120g Butter
  • 450g Caster Sugar
  • 4 Lemons – zest and juice
  • 4 Large Eggs

Instructions

In a saucepan melt the butter, then add the sugar, zest and lemon juice.  Once the sugar has melted, take off the heat and let the mixture COOL down.  It is SO important you make sure the mixture is properly cooled before carrying on to the next step, or you will end up with lemon scrambled egg.

Once the mixture has cooled, beat the four eggs and then mix them well into the cooled lemon mixture within a glass heatproof bowl that will fit into your slow cooker.

Place a double layer of tin foil over the bowl, then place gently into your slow cooker.  The carefully add boiling water to half way up the side of the bowl.  Place your slow cooker lid on and turn to the “LOW” setting.  It will now need around 3.5 – 4 hours to cook.  Towards the end of the 3rd hour, I take it out and just give it a stir, before popping back in the slow cooker for its final cook through.

Notes

Lemon Curd can be used in so many different ways!  As well as being delicious on toast for breakfast, you can use it in my lemon drizzle cake recipe and I am soon preparing the recipe for some lemon cupcakes.  You can also make lemon tarts with it, plus I do love it on pancakes too!

The yield refers to 3 good sized jam jars.
