Green Goddess Salad

Green goddess salad, which I truly love especially for lunch. There are many differing green goddess salad and green goddess dressing recipes, so this is my version, which I have been loving for some time. The great thing about this viral green goddess salad, is that if there are ingredients you are not liking then you can remove or add pretty much to your pleasure. For example, one friend asked that I make the green goddess salad recipe without fresh coriander as she does not like it. My version omits both fresh coriander and parsley, but if you like it, then swap and add until your hearts content.

The green goddess salad dressing is more than a dressing! I place the extra in my fridge and will use it like a dip with tortilla chips and bread sticks, and it is totally delicious as a condiment in a roast chicken salad sandwich. I have this green goddess salad on its own, but adding some feta cheese or cooked chicken is just another delicious level!

So watch the recipe, make swaps as you please but the idea of it is to be as healthy as possible, by you “getting your greens” intake.

Ingredients

Units Scale

How I make my salad:

  • 100g White cabbage diced
  • 25g Baby gem lettuce shredded
  • 25g Rocket diced
  • 3 Spring Onions Chopped
  • Broccoli gently boiled until tender and then drained
  • Cucumber diced
  • 1 Celery stick chopped
  • Handful of nuts and seeds roughly chopped

Green Goddess Dressing

  • 2 Cloves garlic chopped
  • 25g rocket
  • 25g basil
  • 1 avocado
  • 5 tbsp Greek yoghurt
  • 3 Spring onions
  • 2 Tbsp capers
  • 40ml Extra virgin olive oil
  • 1 Lime juiced
  • 1/2 Tsp salt or more to taste

Instructions

Placed and mix the salad ingredients on a plate ready.

Take the salad dressing ingredients and blend until smooth.  You will need to add water to it, I suggest that you do this bit by bit, until you reach the consistency that you prefer the dressing.

Drizzle over the salad and eat as it is, or see the notes below for ideas.

Notes

I love the dressing as dip for tortillas, crackers and breadsticks.  The dressing is also nice added into a roast chicken salad sandwich.  The salad also is lovely with feta cheese crumbled in, and also with shredded roast chicken.
