Of course you can swap for a vegan alternative, or just remove it and add more apple juice. The apple juice also gives a lovely sweetness to the oats, where you can ignore the optional honey should you so wish!

Ingredients

Units Scale
  • 45g Oats
  • 3 Heaped tbsps of Vanilla Yoghurt
  • 100ml Apple Juice
  • 1.5 tbsp Mixed seeds
  • Pinch of Ground Cinnamon
  • 1 Tbsp Chopped Dried Apricot
  • 1Tbsp Desiccated coconut
  • Optional – Mixed berries, fruit, nuts, other fruit like grated apple, strawberry etc.

Instructions

In a bowl or tub place in the oats, 2 tbsp of the yoghurt (reserving the other 1 tbsp for the following day) apple juice, mixed seed, cinnamon, coconut, dried apricot and any nuts if using.  Stir well and place cling film, or lid over and  leave in the fridge overnight.

The next morning, I find it is nicer to stir in the other 1tbsp of yoghurt, then I either eat it with other  optional items in the bowl as listed above, or place in a kilner jar and take it with me.  Layering the fruit on top, helps keep it nicer rather than mixing and taking it.
