Ingredients
- 400g Pasta (Such as Penne, Farfalle, Rigatoni Fusilli)
- 50g Butter
- 35g Plain Flour
- 400ml Milk
- 150g Strong Cheddar Cheese
- 2 x 160g Tinned Tuna Chunks Drained
- 60g Sweetcorn (Frozen works best)
- 60g Peas (Frozen)
- 4 Spring Onions Chopped
- 1 Red Pepper Chopped and Diced
- Option of parmesan cheese and fresh basil leaves.
Instructions
Pre-heat oven to 180 degrees fan.
Bring a large pan of salted water to the boil and add the pasta according to the packet instructions. Then reduce the cooking time by 3 minutes. Whilst the pasta is cooking take a heavy bottomed saucepan and melt the butter on a medium heat. Add the flour to make a roux and cook through for a few moments, ensuring that you continue to stir. Gradually whisk in the milk little by little to stop the sauce going lumpy. Then add the cheese and stir until all combined. Check for seasoning and add some pepper. Usually salt is not required, if you are using good quality strong cheese.
Once the pasta has cooked, drain and place into a deep ovenproof dish. Sprinkle over the sweetcorn, peas, red peppers and spring onions. Add the cheese sauce to the pasta and vegetables and stir well to make sure everything is coated. Then place the chunks of tuna in, taking care not to break it up too much or it will be mushy. You can then grate over some parmesan if you wish.
Bake in the oven for 15 minutes to cook through. Serve with fresh basil leaves if you wish. This is lovely served with garlic bread and/or a crisp green salad.
