Pea And Mint Soup Recipe

Pea and mint soup recipe that is healthy and also delicious! I love pea and mint soup, in fact it is probably one of my favourites.  It is so simple, easy and does not need a long list of ingredients, as most of them are probably available in your kitchen. Although I often have a swirl of cream in my soup at the end and also a knob of butter during cooking, it is not vital. This means that the recipe is great for those following a vegan diet too. When you see the calories, this is a great way to feel full without having high calorie levels!

The soup probably sounds like a weird combination, but it works! I often find that peas are under-rated. Some people love them and some hate them. One friend utterly hates them, but will eat this because it is blended. So if you have a fussy eater in your home and you want them to eat more greens, then this may be a crafty but great tactic to use.

Can you use frozen peas for pea and mint soup?

Frozen or fresh peas are the best for this recipe. It does not matter if they are frozen garden peas or petit poi’s, they taste amazing in this recipe. Fresh peas can take a while to pod, so this is a great way to use frozen peas.

Can I use this recipe for pea and ham soup?

Yes you could use this recipe, and just omit the mint. You can shred up some cooked ham and warm it through for a couple of minutes after blending. Don’t add it before blending, or you will have no ham!

Description

Pea and mint soup recipe, which is easy to make and can also be made vegan by omitting the cream and butter.  In fact, I often omit those to make a healthier soup.  Pea and mint soup sounds a weird combination but it is a great one.  Pea and mint soup can also be made from frozen peas, which most people have in their home.


Ingredients

Units Scale
  • 700g Peas – frozen can be used as well a fresh
  • 1 large onion sliced
  • 1 medium potato cut into cubes
  • 2tbsp olive oil
  • Knob of butter (optional)
  • 1 litre of vegetable stock
  • Good handful of mint leaves
  • Salt & pepper to taste
  • Swirl of cream at the end (optional)

Instructions

Melt the butter (if using) and olive oil in a large pan. Add the onion and potato and gently cook for around 5 minutes. Then add the stock and cook with a lid on for  further 10 minutes so that the potato is cooked and soft.

Place in the peas and mint and bring it to fast simmer for a further 3 – 4 minutes. Blend the mixture until smooth.  For extra smoothness the soup can be passed through a sieve which will leave it ultra silky.  You can alter the texture and thickness of this soup to your liking by adding a little extra stock, or just allowing the soup to cook and reduce for longer.

You can as an option, swirl some single cream or creme fraiche into it, with an extra mint sprig for decoration.
