Ingredients
- 300g Fresh tomatoes cut into quarters
- 200g Mushroom chopped (or you can use whole button mushrooms)
- 1 Shallot chopped
- 5 Garlic cloves chopped
- 3 Tbsp Extra Virgin Olive Oil – You may need a bit more.
- 1Tsp Cumin Seeds
- 1 Tsp Ground Coriander
- 1/4 Tsp Chilli Flakes (or more if you like extra heat)
- 1/2 Tsp Ground Cumin
- 1/2 Tsp Ground Turmeric
- 1/2 Tsp salt
- 30g Butter
- 3 Tbsp Fresh coriander chopped
Instructions
In a large frying pan or wok, gently heat up the oil, and add in the shallot and garlic cloves, and stir and cook gently for 3-4 minutes. Then add in the spices, continuing to stir. After a minute, add in the mushrooms and stir into the spice mixture for 3 minutes. Add in the salt and add the tomatoes. You want to slightly turn up the heat when cooking the tomatoes but be careful not to be over rigorous when stirring, as it’s nicer when the tomatoes still retain their quarters, without going mushy. You can see this on the tomato curry recipe video. Cook for around 3 minutes, then add in the butter and as soon as that has melted through add in the coriander and cook for another minute.
Serve with rice, but we love it with warmed chapatis and onion bahji. Filling chapatis with our hands into like little wraps, is a joy! Chapatis are usually around 10 seconds per side heated up in a dry warm frying pan. Check the instructions, depending on the brand you buy.
