Mini sponge cake recipe, that is super easy, tasty and fairly quick to make. I wanted to do an individual sponge cake recipe, because they are particularly useful for events., saving having to cut and slice cake. So I’ve used this mini vanilla sponge cake recipe for occasions such as birthdays, anniversaries and used it as one of my Queens Jubilee recipes. I shall also be using it as a Kings Coronation recipe, for my coronation cake.

There is a real ease about the measuring of this easy mini sponge cake recipe, because it revolves around the weight of the eggs. You can watch my YouTube video in the recipe card, which will show, plus gives you hints and tips for how to bake a cake successfully. You can fill the cakes to make mini Victoria sponges, or fill with fresh whipped cream, strawberries and jam. They are also lovely with buttercream and lemon curd too. The method for how to make buttercream is also in the video, and mentioned below.

Ingredients
Weigh 2 eggs. Whatever the weight of the eggs is the same weight as the butter, flour and caster sugar.
Sponge Ingredients
- 2 Eggs beaten (Video recipe was 135g)
- Self Raising Flour (135g as per egg weight)
- Soft Butter (135g as per egg weight)
- Caster Sugar (135g as per the egg weight)
- 1Tsp Vanilla Extract
- 100ml (approx) of Milk read description or see video
Buttercream And Other Ingredients
- 40g Soft Butter
- 2 Tbsp Milk
- 2 drops of Vanilla Extract
- 125g Icing Sugar (Plus extra for dusting)
- 6tsp Strawberry jam
Instructions
Pre heat oven to 180 degrees centigrade and grease your individual sponge cake tin properly.
Cream the butter and sugar for the sponge until light and fluffy. This can take 5 minutes in a mixer. Add in the vanilla extract. Then alternatively fold in the flour and the egg.
Then gradually add the milk until he mixture is a dropping consistency. Sometimes you need less milk, other times more milk. The video gives a good indication of this.
Ensure all mixture is folded and combined but do not over mix. Then spoon the mixture into the baking tin sections to half way up.
Place into the oven for 15-20 Minutes until risen and springy.
Once cooked, put the sponges on a wire rack to properly cool down.
Once cooled, cut the sponges in half. You can fill with real whipped cream and jam, or can make buttercream and add jam. The method for buttercream is below.
Place the butter and milk in the mixer and mix for a few moments, then add the icing sugar and vanilla extract. Mix for about 5 minutes until it is whipped light and airy.
Take one half the of the sponge and place some buttercream on. With the other half pop some jam on. Sandwich them together, then finally dust the tops with icing sugar. Store in a cake dome or tin.
